Rizes Santorini: An Interview with Interior Designer Dimitris Economou
At Rizes Gastro Taverna in Fira, Santorini, design and gastronomy come together in a space that celebrates both tradition and contemporary elegance. With its breathtaking caldera views, authentic farm-to-table philosophy, and warm Greek hospitality, Rizes has quickly become one of the most unforgettable dining experiences on the island.
To understand the creative vision behind the restaurant, we sat down with interior designer Dimitris Economou, who translated the owners’ dream into a timeless space where architecture, atmosphere, and cuisine unite.
Dining in Fira with Caldera Views
When people think of Santorini restaurants, the caldera is often the star. At Rizes, the dramatic volcanic landscape is not just a backdrop but an integral part of the experience. The design embraces the natural beauty of the island while offering guests a refined fine dining experience in Fira.
Balancing Tradition and Modern Design in a Santorini Restaurant
Economou worked with natural materials such as wood and stone, reminiscent of traditional Greek tavernas, and blended them with modern textures, lighting, and details. The result is a space that feels authentic yet sophisticated — perfectly suited for gourmet dining in Santorini.

Interview with Interior Designer Dimitris Economou
Q1. Dimitris, what was your main inspiration when designing Rizes Gastro Taverna?
A1. The inspiration began with the owners’ vision. From the very start, Panagiotis, Artemis, and Alexandros told me: “We have the most amazing view, but our target is for people to come here for the food, the place itself, and the ambience.” That sentence defined my approach. I wanted to create a space where gastronomy and atmosphere would be as unforgettable as the Santorini caldera.
Q2. How would you describe the balance between tradition and modern design in Rizes?
A2. I worked with natural materials like wood and stone, reminiscent of traditional tavernas, but combined them with contemporary details, lighting, and textures. The result is an environment that feels authentic and rooted in Greek culture, yet sophisticated enough to complement the fine gastronomy.
Q3. The caldera is one of the most dramatic backdrops in the world. How did this influence your approach?
A3. The view is already breathtaking, so the design had to frame it rather than compete with it. We used open terraces, layered levels, and discreet furniture that guide the eyes outward. In this way, nature remains the true star, while the architecture and ambience support the overall experience.
Q4. What atmosphere did you want guests to feel the moment they enter Rizes?
A4. Warmth, authenticity, and elegance. I wanted guests to feel like they belong — that they are welcomed into a space where tradition meets refinement. It is a place to relax, enjoy, and connect with Greek hospitality on a deeper level.
Q5. Can you tell us about a design detail that guests may not notice immediately but which makes a difference?
A5. There are many small touches — handcrafted textures, ceramics, fabrics — chosen to give authenticity and soul. These details aren’t always consciously noticed, but they create harmony and depth that make the space feel alive and timeless.
Q6. Looking back, what does Rizes represent to you personally as a project?
A6. It represents a true creative challenge. Panagiotis, Artemis, and Alexandros told me from the beginning: “You have to design a restaurant that will stay forever in history, not just a restaurant.” That became my compass. And today, I feel that Rizes is exactly that — a place where architecture, gastronomy, and culture meet to create something lasting.
Authentic Greek Hospitality in Santorini
Every detail at Rizes has been chosen to reflect the soul of Greek culture. From handcrafted ceramics and textiles to carefully designed spaces that welcome guests with warmth, the restaurant embodies authentic Greek hospitality. It is a place where visitors can relax, enjoy, and feel a deep connection with the island.
Farm-to-Table Gastronomy Meets Design
Rizes is not only about stunning architecture — it’s about flavors rooted in Santorini’s land and traditions. The farm-to-table philosophy ensures that guests enjoy dishes crafted with local produce, while the design frames the experience in harmony with the caldera. Together, they create a dining journey that is as authentic as it is unforgettable.
